Meal Plan Monday - Dinners the Hubby can Make Edition!

It's not really Monday yet..shhh! Don't tell anyone :) But because of what tomorrow holds for me, I am writing Meal Plan Monday on Sunday.

I'm having surgery tomorrow :( My gallbladder is being removed {which is a good thing!}, but I'm not a fan of surgery... so please pray for everything to go as planned and as little pain for me as possible. I'm a huge wussy!

Anyway, I have no idea what to expect as far as recovery goes, so I'm planning simple and easy meals that my hubby can make while trying to wrangle two hungry kids at dinner time. He is a great cook and could do most of the normal meals that we do {except for raw chicken...he kinda has a phobia of it}. But we are simplifying since he'll have a lot on his plate this week.

Monday - Leftovers

Tuesday - Frozen Pizza & Salad night

Wednesday - Chicken Patties, French Fries, Broccoli & Cheese

Thursday - Hamburgers & Hotdogs, Mac & Cheese, Corn on the Cob {corn recipe below!}

Friday - Penne Marinara, French Loaf, Some kinda Veggie

Saturday - Grilled Chicken, Baked Potatoes, Salad, Green Beans

Sunday - Mother's Day Festivities

In the summertime, Corn on the Cob is a staple in our household. We literally eat it like 2-3 times a week. I have several ways to cook it {boil, grill, half or whole, soaked or not}, but the favorite way to cook it is below. The flavor is so much better. And the best part is...drumroll please...no husking the corn & picking those little silkies off! {okay, you do have to husk it, but its WAY easier}

Super Simple Corn on the Cob
Preheat Oven to 375F.
Stick the corn {in husks} in the oven.
Walk away & cook rest of dinner {~30 minutes}
Get it out of the oven
Let cool for a few minutes {SUPER HOT!}
Remove Husk & Enjoy!

Removing the husk is a million times easier after baking the corn. The silkies or hairs or whatever you call em literally fall right off!

I'll probably be MIA for a bit, but I'm sure you'll all understand!
