Sneaky Waffle Sandwiches

Operation Super Sneaky Mommy Trick Take 3 was a success! This time, we made waffle sandwiches. As long as you have a waffle iron, this is super easy and the kids devoured them!

The problem that I've found with these tricks is that your kids have to be distracted so that you can sneak the suspicious looking veggies into their food without them noticing.

Step 1: Pull out some bread and set your toddler to the task of removing the crust. We did 6 slices of bread.

Step 2: Out of the sight of your child, mix the following ingredients in the food processor.
1/2 cup lowfat cottage cheese (we used full fat :))
1 large egg white
1 teaspoon brown sugar
1/4 teaspoon salt
1/2 cup sweet potato puree

Note: I recommend adjusting the recipe down in half though (depending on how many mouths you have to feed!). This was supposed to be enough spread for 4 sandwiches, but we made 3 sandwiches and had enough for another 3 sandwiches a few days later with some to spare.

Step 3: Spread mix between 2 slices of bread and stick in the waffle maker until golden.
And here were the happy eaters!

Horrible quality...I don't know what happened.
