So since my first endeavor in sneaking veggies into yummy food for my kids went sooo well, I decided to try another recipe.
Over the weekend, I bought some sweet potatoes, butternut squash & cauliflower to puree and stick in the freezer. I got about 4 1/2 c portions of sweet potatoes with a large sweet potato and 8 1/2 c portions of squash from a large squash.
Since my kids love grilled cheese (especially ones cut out in cool shapes with cookie cutters), I thought I'd try the Deceptively Delicious grilled cheese recipe.
The recipe calls to make a "spread" to put between the two slices of whole wheat bread (which we use anyways).
* 1/2 cup squash or sweet potato puree
* 1/2 cup shredded cheddar cheese
* 1 Tablespoon butter or margarine
* 1/4 teaspoon of salt
Mix these ingredients together and spread between the two slices of bread (obviously :) ). Her recipe called to use 1 Tablespoon of Olive Oil in the pan. I buttered my bread first, then used the spread, and grilled as normal.
Layne stuck her cookie cutter of choice on it to cut out her strawberry shape & the spread squirted out everywhere. Of course this raised red flags to her. She asked if it was squash, I avoided the question and just asked her to try it. She took a bite and spit it right out. (Insert: Yuck, Gross, I don't like this)
I tried it and it was definitely noticeably different than a "normal" grilled cheese. Grayson did eat part of his, but I had to make Layne a regular grilled cheese. Lesson learned = don't try the grilled cheese recipe!
Alas, I am not giving up! Next recipe to try is the sweet potato pancakes! Stay tuned!
