Meal Plan Monday

We have a busy, busy week ahead, but here's our meal plan for the week. I'm also going to pick a recipes to include from one of the meals each week.

Side note: I am also doing weight watchers and all of these meals are prepared in a semi-healthy manner. I usually use all whole wheat pasta, low fat dressings, etc.

Monday - Chicken Pasta Alfredo, Salad, Bread

Tuesday - Dinner at Brother-in-law and future Sister-in-law's house

Wednesday - Crockpot Loaded Potato Soup, Sandwiches

Thursday - Spaghetti, Garlic Bread, Salad - Momma & kids are on our own! Daddy's at Nick's Bachelor Party

Friday - Lunchmeat Calzones

Saturday - Daddy's cooking :) (Probably pizza or chicken nuggets) - Jessica's Bachelorette Party

Sunday - Pork Chops, Twice Baked Potatoes, Corn, Green Beans

And the recipe that I'm going to share...drumroll for the Pork Chops.

This was actually a Weight Watcher recipe that I started making about 5 years ago...and just never stopped making! I'm going to share it exactly how I make it, which is not at all precise. If you have any questions, don't hesistate to ask!

*Pork Chops (obviously)
*1/2 c Italian Bread Crumbs
*Egg Whites (or Egg Beaters)
*1/4 c Parmesan Cheese
*Garlic Powder (a good shake)

Mix in a shallow bowl, bread crumbs, parmesan cheese, and garlic powder. In another shallow bowl, add separated egg whites and beat well (or just use egg beaters). Trim the fat off the pork chops & soak well in the egg mixture. Then coat with bread crumb mix. Cook on 375-400F for 15-20 minutes. Although my oven is a convection oven, so it may take longer than 15-20 minutes. I always cook them until the breading starts to turn brown

This is Laynie's favorite meal...she'll eat 2 pork chops and nothing else!
