This is one of my newest recipe creations. I had some leftover ingredients from other dinners and knew this would be one that my kids would just eat up.
* Some sort of pizza crust (or you could use slimwiches, pita bread, etc)
* Alfredo sauce (I like Ragu)
* Mozzarella Cheese
* Chicken (cooked and chopped)
* Veggies of choice (I used carrots & spinach)
I like to use Pillsbury (or generic brand) pizza crust or Betty Crocker Pizza Dough Mix. After the dough is rolled out, I used a small bowl as my crust cutter to create little circles. I keep kneading the scraps back together and rolling out until all of the dough is used. You should get 8 or so 5 inch diameter circles.
Next spread Alfredo sauce to approximately 1/4" from the edge of the crust. (This is a great task for a little one to help with!)
Chop cooked chicken and veggies and add to pizza. I like to use the Pamper Chef food chopper (one of my BFFs for cooking). Sprinkle cheese over top. And add a little bit of garlic seasoning if you wish.
Bake at 350F for 8-12 minutes (or just keep an eye on it like I do until the crust starts to turn golden and the cheese is melted :)).
And this dinner only costs ~ $3-4 to make for 3-4 people!
